Carrot Cake Recipe with Oreo Toppings

Ingredients

  • 3 medium eggs
  • 2/3 or 1 cup sugar (adjust to your preferred sweetness)
  • 2/3 cup of oil
  • 1 teaspoon vanilla extract (or any flavor of your choice)
  • 2 cups of flour
  • 1/2 teaspoon baking soda
  • 1 1/2 teaspoons baking powder
  • 2 cups grated carrots (5 small carrots or 3 large ones)
  • Topping: Oreo cookies

Preparation

  1. Mix Wet Ingredients: Combine eggs, sugar, oil, and vanilla extract in a bowl. Beat the mixture until light and fluffy.
  2. Dry Ingredients: Gradually add the flour, baking powder, and baking soda. Mix gently until combined, be careful not to overmix.Add   grated carrots and mix
  1. Prepare the Topping: Crush Oreo cookies and set aside.
  2. Bake: Preheat your oven to 165°C. Pour the batter into a greased or lined baking pan. Sprinkle the crushed Oreos on top.
  3. Bake Time: Place the pan in the oven and bake for 60 minutes or until a skewer inserted into the center comes out clean.

Serving Suggestion

Allow the cake to cool before slicing. Serve it as is, or pair it with whipped cream or vanilla ice cream.
